While you get ready to taste the food, allow us to remind you of a few tips that you may already know.

Instructions for warming food

• When warming gravies or dal in pan over gas, always add a spoonful or two of hot water. It helps in breaking the lumps and also prevents food from sticking to the bottom of the pan.

• Warm Dimsums just as you would warm idlis in the microwave. It is best to use a steamer, but if you do not have steamer, then use a bowl, place the dimsums carefully so that they do not touch each other, sprinkle a few drops of water (it is known as water bath for dimsums) put the lid and then microwave for one to one and  a half minutes. If you do not sprinkle water or cover the bowl, they will get stringy.

• Warm paneer preparations in pan on gas only. If using the microwave please heat for 1-2 minutes only. Paneer becomes dehydrated and chewy when kept in the microwave for more than a minute or two, or heated for too long.

• When warming cheesy garlic bread or kurkuri bhindi or any deep fried item, please use the toast or grill function in microwave. If you have an oven/toaster/grill it would    be best to warm up these items in it. Do not refry fried items because it may soak up oil if inexpertly done.

• When warming up Tandoori items, please use the grill function in the microwave or use the oven/toaster/grill if you have. Do not use the frying pan because the marination loses its taste and burns up on high heat.

• For warming mutton seekh kebabs, use 5 gms of salted butter per portion and sauté in frying pan over medium heat for 3-4 minutes. If you have frozen seekh kebabs,   then allow to thaw at room temperature and then sauté. Quick defrosting in the microwave often makes them hard and tight because they lose moisture.

• When warming up tandoori roti/paratha/naan, please use the oven/toaster/grill at 200 degrees C after preheating. Leave it in for 3-4 minutes only or till desired crispness. If you use the microwave, please use the toast/bread snack /pizza function. Do not heat for very long. Different microwaves have different heating functions   so please use accordingly.

• When warming up biryani in a pan over gas or induction, please do not stir heavily, because by stirring heavily, you may break the long rice grains. It is best to warm biryani in the microwave, in a microwave friendly dish with cover. After you put the biryani in the bowl, please sprinkle a few drops (drops please....) of water before putting the cover. This helps keep the rice moist. Time to heat is 2 minutes optimally. But if not fully heated, then using a spoon turn the biryani over gently and put back to heating again for 1 minute only.

• Please store leftover cut salad in a container with tight lid. Use for 24 hours and then discard.

• MOST IMPORTANT: Minimal use of bare hands on food helps keep it fresh longer. Always use spoons or when doing salads etc, use kitchen gloves. It’s a pleasure serving you. Bon appetit.
